Asian Salad & Dressing


Ingredients

For the salad

2 Happy Food tangerines, peeled and sectioned

1 avocado

1 head of romaine lettuce, chopped

1/4 cup sliced almonds

1/4 cup crispy noodles

For the dressing

2 1/2 tbsp. rice vinegar

1 tbsp. toasted sesame oil

3/4 tbsp. sugar

1/2 tbsp. soy sauce

1/4 tsp. ground ginger

1/4 tsp. dry mustard

A tasty dish that supports both vegan and flexitarian diets. Look no further! This Asian salad is one of our favorites, really hitting the spot. Not to mention, this homemade dressing is the perfect combo for this unique dish. Remember, you can easily add a protein of your choice to this salad, too. Don’t forget to toss in the crispy noodles at the end!

Instructions

1. Combine all the ingredients for the dressing in a bowl and mix well.

2. Peel and section the tangerines. Set aside. Peel and pit the avocados and thinly slice. Set aside.

3. Add the lettuce, tangerine segments, avocados, sliced almonds and crispy noodles. Drizzle with the dressing. Serve immediately.
